The vineyard:
- Area under vine: 22 hectares
- Age of the vines: 20 years on average.The oldest go back to 1957.
- Location: 25 plots in the communes of Saint Germain d’Esteuil, Ordonnac, and Gaillan
- Terroir: fairly homogeneous, with a fine gravel topsoil and a subsoil consisting of sand and blocks of limestone.
- Grape varieties: 70 Merlot, 30% Cabernet Sauvignon
- Yield: 47 hectolitres/hectare
- Average annual production
Winemaking:
- Wine from each individual plot is separately fermented in temperature-controlled stainless steel vats.
- Maceration: slow and long (30 days)
- Ageing: with oak staves for 4- 6 months
Ethique et Nature:
- Viticulture: biodynamic with sustainable agriculture methods
- Grassing between vine rows and green harvesting
- Estates certified ISO 14 001 (an environmental standard)
